Quinoa burgers
It doesn't always have to be meat! This plant-based patty made from the pseudo-cereal quinoa is quick to prepare and has a juicy flavor!

INGREDIENTS
Quinoa patties
- 200 g white or colored quinoa
- 400 ml vegetable stock
- 1 carrot (approx. 120 g)
- ½ bunch of parsley (approx. 15 g)
- 1 onion
- 1 clove of garlic
- 1 tbsp mustard
- 1 heaped tsp of BBQ rub
- 50 g rolled oats
- 1 tbsp cornstarch
- salt, pepper
- neutral vegetable oil for brushing
Toppings
- 2 tomatoes
- ½ cucumber
- 1 red onion
- 1-2 hearts of romaine lettuce
- 4 tbsp tomato ketchup
- 4 tbsp mayonnaise
- 8 burger buns
HOW TO MAKE IT
- Rinse the quinoa in a sieve under running water and place it in a pan with the vegetable stock. Bring to the boil and simmer on a low heat for approx. 15 minutes (follow the instructions on the packet). Discard any remaining water.
- Peel and finely grate the carrot, e.g. using the ZWILLING Z-CUT tower grater. Peel and finely chop the onion and garlic. Wash the parsley, shake dry, pluck the leaves and chop them finely. Mix the prepared ingredients with mustard, BBQ rub, oats and cornstarch into the still hot quinoa mixture. Season with salt and pepper. Leave to stand for about 15 minutes.
- In the meantime, prepare the ingredients for the other topping. Wash the tomatoes, remove the stalks and slice the flesh. Wash and clean the cucumber and slice it. Peel the onion and slice it as well. Remove the lettuce leaves from the stalk, wash them and allow them to drain well. Mix the ketchup and mayonnaise to make a cocktail sauce.
- Open the ZWILLING ENFINIGY Contact Grill in BBQ mode and preheat both plates to 180 °C. Toast the burger buns briefly on both sides on the heated grill and set aside.
- To grill the patties, close the contact grill again and press the automatic Burger program three times so that the cooking level "well done" (3 flames) lights up. Brush the quinoa patties with oil on both sides and prepare them on the heated grill (6 minutes).
- Spread the cocktail sauce on the cut surfaces of the burger buns. Cover the undersides with lettuce leaves, place a patty on each, top with tomato and cucumber slices and onion rings. Place the top half of the bun on top and enjoy immediately.
Tip
The patties can be baked with cheese.
