The MIYABI Hibana collection features a beautiful 49-layer Spark Damascus pattern on the blade that both strengthens and protects the core of FC61 steel. The triple-riveted handle has a curved, ergonomic bolster for the utmost comfort using the pinch grip. Sleek black and brass spacers on the handle add to the beauty and weight that promotes sturdiness in hand and maneuverability at the tip. The Rocking Santoku Knife supports Western circular motion and Asian chopping. The versatile blade is ideal for chopping vegetables, slicing through meats and preparing fish.

Rated 5 out of 5 by from MIYABI - Rocking Santoku I am not a professional Chef. However, being an avid culinary hobbyist, highly technical and diligent with my purchases, form, function, design and value are prerequisites. With a fundamental understanding of material properties, ZWILLING’s FC61 steel has ideal properties that when combined with Damascus fabrication and thermal treatment, the knife edge is incredibly refined, ultra sharp and precisely hardened to maintain function for long periods of time. I use this knife daily. The angle of the handle and shape of the blade works very well for my style and was an easy transition from the traditional Chef’s knife for processing most small to medium sized food. The knife is well balanced with a natural feel that provides greater control when mincing, slicing and dicing . Julienne cut’s require extra motion due to the shape of the blade and if large portions are required, I find utilizing a strait contact blade to be more efficient. I am very happy with my purchase and recommend this knife to anyone looking to improve their culinary experience.

Hello, the blade is stainless steel or carbon steel? I ask because I’ve seen it listed on other sites as “carbide stainless steel”. Also, does it have a single or double beveled edge?
