Enfinigy Balls

INGREDIENTS
- 100 g pitted dates
- 60 g pistachio nuts
- 150 g nuts and raisins
- 50 g rolled oats
- 2 tbsp. kibbled linseeds
- 2 tbsp. chia seeds
- 50 ml water
Preparation
- Weigh and measure all the ingredients, prepare them and place them ready.
- Halve the dates.
- Add the pistachio nuts to the blender jar, close the lid, and mix at the highest setting to create a fine powder. Remove from the jar.
- Add the rolled oats, linseeds and chia seeds to the blender jar, close the lid and mix at the highest speed for around 5 seconds, until the ingredients are finely chopped. Remove and add to a bowl.
- Add the fruit-nut mixture and dates to the blender jar, close the lid, and mix using the Pulse function 10 times briefly, until the ingredients are finely chopped. Add the remaining ingredients to the bowl.
- Pour in the water and mix everything well. Use the mixture to make approx. 20 g balls. Immediately turn each one in the finely ground pistachio nuts and allow to become firm in the fridge for around 2 hours.
Tip
Leave out the ice cream to enjoy the dessert as a cool refreshment with a quick caffeine kick.
