INGREDIENTS
- 4 peeled garlic cloves
- 2 eggs
- 2 tsp mustard
- 2 tsp salt
- 1 pinch of sugar
- 3 tbsp white wine vinegar
- 4,5 cups vegetable oil
Preparation
- Put the ingredients into the blender jar in the following order: Garlic, eggs, mustard, salt, sugar and white wine vinegar. Close with the lid and select the smoothie program and confirm with pressing the button.
- Then set the blender to speed 1 and pour in the oil through the lid opening in the middle, first drop by drop and then slowly in a thin stream, until a whitish emulsion is formed.
- Season the finished aioli again with salt and sugar and serve immediately or refrigerate until ready to eat.
Tip
The aioli can be refined with a pinch of saffron or the pulp of a vanilla pod and goes very well with grilled meat, fish dishes and seafood.
