Cashew Cranberry Energy Balls Round, fruity and quite powerful: energy balls, also known as bliss balls, are small muesli balls for a power snack between meals. The bite-sized energy suppliers consist mainly of dried fruits, nuts and rolled oats.

Ingredients

  • 50 g (1/3 cup) chopped almonds
  • 50 g (1/2 cup) rolled oats
  • 50 g (1/3 cup) cashew nuts
  • 50 g (1/3 cup) cranberries
  • 5 pitted soft dates
  • 1 tsp coconut oil
  • 2 tbsp hot water
  • 1 tbsp almond paste
  • ½ tsp ground vanilla

Preparation

Place half of the almonds in a blender, e.g. ZWILLING ENFINIGY Personal Blender, and chop slightly finer using the pulse program, then remove.

Put the remaining almonds in the blender jar together with the rolled oats and grind finely, also using the pulse program. Then place in a bowl.

Roughly chop dates and place in the blender jar with cashews and cranberries and finely chop using pulse program. Also add to the bowl.

Dissolve coconut oil in hot water and add to nut-fruit mixture together with the almond paste and vanilla. Mix everything with a dough scraper or your hands to form a smooth mass.

Form balls weighing approx. 25 g from the mixture, roll in the finely chopped almonds and place in a suitable ZWILLING FRESH & SAVE Box, e.g. the Lunch Box, vacuum seal and let rest in the refrigerator for approx. 1 hour.
