INGREDIENTS
Curry sausage
- 4-6 sausages (pork, veal or beef)
- 2 tbsp vegetable oil
Sauce
- 2 small onions
- 1 clove of garlic
- 250 g/9 oz peaches (canned, in their own juice)
- 2 tbsp neutral vegetable oil
- 2 tbsp curry powder
- 1 tbsp sweet paprika powder
- 5 tbsp tomato puree
- 1 tbsp apple cider vinegar
- 800 g/28 oz chopped tomatoes (from the can)
- salt, pepper
Also
- If necessary, various curry powders, depending on the desired spiciness, for dusting
HOW TO MAKE IT
Peel and chop the onions and garlic. Drain and chop the peaches.
Heat the oil in a medium saucepan, e.g. ZWILLING Pure, over a medium heat. Sauté the onions in it. Add the garlic and sauté briefly. Add the peaches. Dust everything with curry and paprika and fry very briefly. Stir in the tomato purée and vinegar. Add the chopped tomatoes and season with salt and pepper. Put the lid on, bring to the boil and simmer the sauce at a low temperature for approx. 1 hour. Stir occasionally. At the end of the cooking time, puree with the ZWILLING ENFINIGY hand blender until smooth or chunky. Season to taste again and keep warm.
For the sausages, heat the oil in a pan, e.g. ZWILLING Pro, and fry the sausages on all sides over a medium heat for approx. 8-10 minutes until crispy.
Remove the fried sausages, cut into pieces and serve. Spread the warm curry sauce generously over the sausages. Dust with curry powder.
Fresh bread, rolls or baguette are excellent accompaniments. The delicious sauce can be soaked up with it.
Tip
If you like the curry sauce a little sweeter, you can refine it with a little peach juice.
