CHRISTMAS GOOSE FROM THE COCOTTE WITH CRANBERRY RED CABBAGE

INGREDIENTS
For the goose:
- 1 goose (approx. 4.5 kg)
- 1/2 tsp salt
- 1 teaspoon paprika powder
- 2 tbsp oil
- 2 apples
- 1 orange (organic)
- 1 onion
- 1 stick of celery
- 2 sprigs of thyme
- 4 sprigs of dried mug wort
- Cocotte oval 37 cm
For the red cabbage:
- 850 g fresh red cabbage
- 2 onions
- 40 g lard
- 200g dried cranberries
- 150 g jarred cranberries
- 500 ml vegetable broth
- 100 ml red wine, dry
- 30 g walnuts, roughly chopped
- 7 apples
- 2 bay leaves
- 4 juniper berries
- 4 cloves
- 1 tsp cinnamon
- 2 tsp sugar
- Salt
- pepper
PREPARATION
- Remove the goose's innards, cut off the rump and trim the wing ends. Wash the goose inside and out under cold water and then pat dry with kitchen paper.
- Peel the onion, wash the orange, celery and apples. Cut everything into rough pieces, mix with thyme and mugwort and fill the goose with it. Sew the goose shut with kitchen twine.
- Mix the oil, paprika powder and salt and brush the goose on all sides.
- Heat the lightly oiled cocotte in the oven. Then place the goose in the cocotte and cook at 200 degrees top/bottom heat for about 200 minutes. In between, scoop the roasting stock out of the cocotte 2-3 times and baste the goose with it. Remove the lid from the cocotte for the last half hour of cooking time.
- While the goose is stewing in the oven, the red cabbage is prepared. To do this, first peel and dice the onions. Clean red cabbage and cut into strips.
- Sauté the onions in the lard in a large pot until translucent. Add the red cabbage and sauté for 5 minutes. Add all the spices, cranberries and cranberries, pour in the broth and red wine. Simmer the red cabbage over medium heat for 20 minutes, stirring occasionally.
- Wash an apple and cut it into bite-sized pieces, add it to the red cabbage and let the red cabbage simmer for another 20 minutes. Season with salt and pepper.
- Cut the top off the remaining 6 apples and hollow out the apples generously. Stuff the red cabbage into the apples, sprinkle with walnuts and put the lid back on.
- Take the finished goose out of the oven and bake the apples for 10-15 minutes at 200 degrees top/bottom heat.
