BLUEBERRY MUFFINS

INGREDIENTS
- 125 grams of wheat flour
- ½ tsp baking powder
- ½ tsp baking soda
- 75 grams of sugar
- 1 packet (8g) bourbon vanilla sugar
- 1 pinch of salt
- ¼ tsp unwaxed lemon zest
- 1 egg
- 60 ml neutral vegetable oil
- 60 ml milk or plant drink
- 80 grams of blueberries
- 12 muffin paper cups
- icing sugar for dusting
HOW TO MAKE IT
- Mix the flour, baking powder and baking soda in a mixing bowl. Add the remaining ingredients, except for the blueberries. Mix everything with a hand mixer with a whisk to form a smooth dough.
- Stir in the blueberries only briefly on the lowest level or fold in with a spatula.
- For better stability, place two paper baking cups on top of each other. Divide the batter evenly between the molds and place on the grid in the air fryer. Bake in the "Cake" program (180 °C) for approx. 15 minutes. Then remove the blueberry muffins and let them cool on a wire rack. Enjoy dusted with powdered sugar.
Tip
The muffins are great for freezing. That way you have something on hand when unexpected guests arrive.
