INGREDIENTS

Mini Wiener schnitzel

  • 400 g/14 oz veal schnitzel (alternatively pork, chicken or turkey schnitzel)
  • salt, pepper
  • 100 g/3.5 oz wheat flour
  • 2 eggs
  • 200 g/7oz breadcrumbs
  • clarified butter for frying

Potato salad

  • 600 g/21 oz waxy potatoes
  • 1 small onion
  • 125 ml/5 fl oz vegetable stock
  • 2 tbsp white wine vinegar
  • 1 tsp mustard
  • 3 tbsp neutral vegetable oil
  • salt, pepper
  • sugar
  • 3 stalks of parsley

Also

  • 4 tbsp cranberries from the jar
  • 1 lemon, in wedges

HOW TO MAKE IT

  1. To make the potato salad, boil the unpeeled potatoes in salted water until they are cooked. Then drain, leave to cool slightly, peel while still hot and cut into slices.
  2. Peel and finely chop the onion and place in a ZWILLING FRESH & SAVE Vacuum Container L made of glass with the warm potato slices. Mix the vegetable stock, white wine vinegar, mustard, oil, salt, pepper and sugar and pour over the potatoes. Mix everything well. Wash the parsley, shake dry, pluck the leaves, chop and fold into the potato salad. Season to taste again and leave to stand covered until ready to serve.
  3. For the schnitzels, wash the meat, pat dry and lightly flatten so that the schnitzels are evenly thin. Then cut into smaller pieces.
  4. Season the schnitzel pieces on both sides with salt and pepper. Beat the eggs. Dredge the meat first in flour, then in the beaten eggs and finally in the breadcrumbs. They should be well coated all over. However, do not press the breading down firmly.
  5. Heat plenty of clarified butter in a large frying pan, e.g. ZWILLING Joy Plus 28 cm. Fry the breaded schnitzels on both sides over a medium heat until golden brown.
  6. Serve the mini Wiener schnitzels with the potato salad, a dollop of cranberries and lemon wedges.

Tip

The potato salad can be prepared well in advance so that it can be vacuum-sealed in ZWILLING FRESH & SAVE in the fridge for a few days or at least one day. However, the salad should be at room temperature for vacuum packing.
