Ingredients

  • 300g of carrots
  • 300g flour
  • 150g sugar
  • 3 eggs
  • salt
  • A packet of vanilla sugar
  • 150ml oil
  • A teaspoon of cinnamon
  • Zest of an orange
  • 150g cream cheese
  • 100ml maple syrup

Preperation

  1. First preheat the oven to 180°C top/bottom heat. Peel the carrots and grate on the coarse side of the square grater. Mix flour, sugar, cinnamon, baking powder and salt in a bowl.
  2. Add the carrots and mix together with the orange zest, eggs and oil to form a homogeneous dough. This works best with a spatula. Pour the dough into a buttered cake tin and bake for about 25 minutes at 180°C top/bottom heat.
  3. For the topping, mix together the cream cheese and maple syrup until smooth and pipe onto the cake slices using a piping bag once the cake has cooled completely. Marzipan carrots, chopped pistachios and cinnamon powder are suitable as decoration.
