TOMATO SOUP WITH TOPPINGS
This delicious soup has a fresh and fruity taste, with a delicate sour flavour and is aromatic with a creamy consistency. Simply perfect with different toppings!

INGREDIENTS
Tomato soup:
- 6 vine tomatoes
- 1 onion
- 1 clove of garlic
- 2 tbsp. olive oil
- 800g tinned peeled tomatoes
- 1 tsp. sugar
- salt, pepper
- 1 tsp. dried oregano
- 2 tbsp. crème fraiche
- 1 tbsp. white balsamic vinegar
Toppings:
- 4 tsp. croutons
- 4 tsp. chopped parsley
- 8 mozzarella hearts
- 4 basil tips
HOW TO MAKE IT
- Wash the tomatoes, remove the stalks and cut into quarters. Peel and chop onion and garlic.
- Preheat the oil in the cocotte. Sauté onion and garlic in it. Add fresh and tinned tomatoes, season with sugar, salt, pepper and oregano and bring to boil.
- Cover with the lid and simmer over a low heat for about 15-20 minutes. Refine with crème fraiche and vinegar, puree and finally season to
- taste.
- Dress the tomato soup, garnish with the toppings and serve.
Tip: This recipe can also be made with fresh tomatoes during the tomato season. Replace the relevant quantity of tinned tomatoes with fresh tomatoes.
