INGREDIENTS

Tomato soup:

  • 6 vine tomatoes
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp. olive oil
  • 800g tinned peeled tomatoes
  • 1 tsp. sugar
  • salt, pepper
  • 1 tsp. dried oregano
  • 2 tbsp. crème fraiche
  • 1 tbsp. white balsamic vinegar

Toppings:

  • 4 tsp. croutons
  • 4 tsp. chopped parsley
  • 8 mozzarella hearts
  • 4 basil tips

HOW TO MAKE IT

  1. Wash the tomatoes, remove the stalks and cut into quarters. Peel and chop onion and garlic.
  2. Preheat the oil in the cocotte. Sauté onion and garlic in it. Add fresh and tinned tomatoes, season with sugar, salt, pepper and oregano and bring to boil.
  3. Cover with the lid and simmer over a low heat for about 15-20 minutes. Refine with crème fraiche and vinegar, puree and finally season to

  5. Dress the tomato soup, garnish with the toppings and serve.

Tip: This recipe can also be made with fresh tomatoes during the tomato season. Replace the relevant quantity of tinned tomatoes with fresh tomatoes.
