INGREDIENTS

Asparagus soup

  • 500 g of white asparagus
  • 1 untreated lemon
  • 2 shallots
  • 30 g of butter
  • 30 g of flour
  • 200 ml of cream
  • salt and pepper
  • nutmeg
  • 1-2 tablespoons cornmeal, as needed
  • 1 can of watercress

Ham chips

  • 3 slices of raw ham

HOW TO MAKE IT

  1. Cut off the woody ends of the white asparagus and peel the shoots, for example with the ZWILLING PRO peeler. Place the peels and sections of the asparagus into the sieve insert of the ZWILLING TWIN SPECIALS asparagus and pasta cooker. Rinse the lemon in hot water , cut one half into slices and place them in the strainer insert. Squeeze the remaining half of the lemon and set the juice aside.
  2. Cover the asparagus peel with water, put the lid on and bring to the boil. Leave to cook over low heat for about 30 minutes. Meanwhile, cut the asparagus into pieces of equal length. Peel and finely chop the shallots.
  3. For the topping, place the ham slices next to each other on the grill of the ZWILLING hot air fryer so that they do not overlap. Bake in the oven at 200°C for about 5-6 minutes, until crispy. Then remove, drain on kitchen paper and set aside.
  4. At the end of the cooking time, remove the colander insert or pour the broth through a sieve. Squeeze the peels again with a soup ladle and remove them.
  5. Melt the butter in a pan, such as ZWILLING VITALITY, and fry the shallots until translucent. Dust with flour and pour in 1 liter of asparagus broth, stirring. Bring to the boil, add the asparagus pieces and cook over medium heat for about 20-25 minutes, until soft. Pour in the cream and puree the soup, for example with the ZWILLING ENFINIGY hand blender. Reheat the soup. Season with salt and pepper with the ZWILLING ENFINIGY electric salt and pepper mill, grate the fresh nutmeg with the ZWILLING Z-CUT fine grater and add a pinch of lemon juice. Reduce soup to desired consistency or thicken with cornmeal mixed with cold water.
  6. Serve the soup in soup plates, for example those from the STAUB Dining line. Break the ham chips into small pieces, arrange them decoratively over the soup and serve garnished with cut watercress leaves.

Tip

If you don't have a ZWILLING hot air fryer, you can cook the ham slices in the oven at 180°C top/bottom heat (160°C fan oven) for about 10-15 minutes, until crispy.

The remaining cooled asparagus broth can be transferred to a special ZWILLING FRESH & SAVE vacuum container, vacuum sealed and stored in the freezer for the preparation of the next soup.
