INGREDIENTS

  • 100g fresh strawberries
  • 100g fresh blueberries
  • 50g fresh currants
  • 50g red seedless grapes
  • 1 untreated lime
  • 150ml heavy cream
  • 150g mascarpone
  • 250g low-fat curd
  • 1 packet vanilla sugar (8 g)
  • 75g icing sugar
  • 200g oatmeal cookies

HOW TO MAKE IT

  1. Wash and pat the berries dry. Halve the strawberries and grapes, remove the currants from the stalks and set aside. Wash the lime, grate the peel and squeeze the juice of one half.
  2. Whip the cream and set aside. Mix mascarpone, curd, vanilla sugar, icing sugar, lime peel and juice with a hand mixer until fluffy. Fold the cream carefully under the mascarpone mixture.
  3. Coarsely crumble the cookies and layer on 6 glasses alternating cookies, berries and the cream mixture until everything is used up.

Tip: The fruits can be varied according to season and preference.
