Description
This iron pan from ZWILLING is a very special pan that opens up completely new possibilities for frying. If you handle it correctly, the forged pan with a diameter of 24cm gives you excellent results when searing and grilling. Look forward to crispy fried potatoes, juicy steaks and perfectly braised grilled vegetables.
But you should first note a few special features of the pan, especially before using it for the first time. When you unpack it, you will notice the film of oil on the pan. It was applied to protect the pan and now has to be washed off with washing-up liquid. After that, you should season the wrought-iron pan. It´s easy to do: Simply add a little oil to the forged pan and place it on the stove (medium-high), on the grill or in the oven (at 250°C). Seasoning creates a natural protective layer, the so-called patina. This patina will improve every time you use the pan and protects your ingredients from sticking to the bottom of the pan. You can also use less and less oil over time and fry healthier. The patina gives the iron pan its typical brown-black colour, which is permanent. To keep the patina intact, you should clean the wrought iron pan with hot water and a soft sponge or cloth. A little detergent can also be used, provided that the patina is already well established.
Another advantage of the bottom of the pan is its diamond pattern. This adds an even more intense taste of your food. In addition, the bottom conducts the heat ideally and is very sturdy, so that it does not warp even at high temperatures. This makes the forged pan ideal for searing meat or grilling vegetables and other aromatic dishes. Since the handle can also heat up when frying, please always use an oven glove to hold it. The iron pan is suitable for induction, but also all other hob types, for the grill and the oven.

Season the iron pan – but do it right
Before you use it for the first time, you have to season your ZWILLING iron pan to give it a patina. To do this, simply add some oil to the pan and heat it on the stove (medium-high) or grill until all the oil has evaporated. Alternatively, you can rub the pan with oil and put it in the oven at 250°C. If you want a more even and stronger patina, repeat this process three to four times. Please note the dimensions of the pan if you want to season it in the oven.

Since the patina is still thin at the beginning, you should fry with enough fat or oil. The patina gets better with every use, so you need less and less oil or even fry almost fat-free later on.
