Lemony Herby Dressing
Fresh and light, this dressing style doubles as a marinade. Chop handfuls of fresh herbs (parsley, mint, and cilantro or basil, oregano, and thyme perhaps) and stir into freshly squeezed lemon juice, good quality olive oil, with a dollop of whole grain mustard. Marinate the chicken pieces in half the mixture, setting aside the other half to drizzle on at the table.
Good Ol’ Barbecue Sauce
A sweet Texas style barbecue sauce can be thrown together quickly by starting out with a ketchup base. Add in some softened onions, brown sugar, Worcestershire sauce, lemon juice, and a dash of Dijon, then reduce it down to a thick spreading consistency. Be sure to add the sauce at the end of the chicken cooking time by generously brushing it on the poultry. That way the sweet sauce won’t burn on the grill.
Zingy Yogurt Marinade
A yogurt marinade both flavors and tenderizes the meat on which you use it. Start with Greek yogurt and mix in ground cumin, coriander, cardamom, chopped fresh cilantro, and grated lime zest for an exotic flavor-packed concoction. Scrape off excess marinade before you pop it on the grill and cook on indirect heat to avoid flare ups. Serve with plenty of lime wedges and hot sauce.
Smoky Paprika Rub
Amp up the smoke on your grilled chicken by rubbing it with a smoky paprika mixture featuring brown sugar, cayenne, cumin, onion powder, and plenty of sea salt and freshly ground black pepper. Make up a big batch of rub to have on hand whenever you’re tossing food on the grill. It will keep in the cupboard for up to a month. Serve with lemon wedges to brighten it at the table.
