I am impressed when I saw this cookware, a Ballarini Matera line, an eye-catching beauty of granitium. This is almost a combination of Ballarini Pisa on the outside and alike of Parma granitium coating. Its thick aluminum body heats quickly, perfect for all your cooking needs such as frying eggs, pancakes, omelette, scrambled eggs, sauteing, browning and braising meat and poultry. Don't forget, it comes with the empered glass lid and fry pan is oven safe up to 300F. Granitium is a revolutionary formula inspired by the ancient technique of cooking on stone. The inside of the fry pan does look like a stone however it is not, it is reinforced with ceramic particle coating. Having said that, it has 3 extra-durable layers of PFOA-free Granitium non-stick reinforced with ceramic particle coating, that offers effortless release in cooking and quick cleanup. An ergonomic handle plastic with soft-touch effect of Thermopoint technology guarantees precise temperature control, it turns red when the pan is hot, it tells you it's time to cook and green when it is cooled down then it is time to wash your pan. By cooling down the pan, it is to protect your pan from sudden temperature change, preventing from damaging the coating in the pan. This hard "nonstick surface with a heart of stone" is fork-proof, metal utensil proof and extremely scratch-resistant however wood and silicone kitchen tools are recommended. It is easy to clean, just soak with water and soap and use a sponge to remove food residue. Cleaning is a breeze!!!

Rated 5 out of 5 by from Big pan is a great pan! We cook in big batches so we needed a big pan. The clear lid is so helpful to be able to know when to flip food over. The non-stick coating is great and makes clean up a breeze. This is our first Ballarini brand and we will buy again!

What is the difference between this Matera fry pan and the Parma Plus fry pan?

Hi Both have the same ultra-durable Granitium nonstick coating. Only the outside color.

There are scratches in my pan and the color is browner than before, does it mean the coating is lost and it is unsafe to cook with it?

My pan also is browner than before, but I never used metal utensils in the pan, so no scratches. I imagine the pan had some lingering oil over time that is discoloring it. The is also happening to the underside and outside edges. Any cleaning tips? Salt?
