INGREDIENTS

  • 10.5 oz udon or mie noodles
  • Salt
  • 1 lb 1.5 oz red cabbage
  • 0.7 oz ginger
  • 2 spring onions
  • 8.8 oz salmon fillet
  • Pepper
  • 2 tbsp light sesame seeds
  • 2 tbsp light sesame oil
  • 5 fl oz hoisin sauce
  • 3-5 tbsp soy sauce

HOW TO MAKE IT

  1. Cook the noodles according to package directions in salted water, reserving a cup of the cooking water.
  2. Remove the outer leaves from the red cabbage, cut in half, remove the stem and slice finely or cut into thin strips. Peel and finely dice the ginger. Clean and wash the spring onions, shake dry and cut into fine rings. Wash the salmon, pat dry and cut into bite-sized cubes.
  3. Toast the sesame seeds in the STAUB Cast Iron Perfect Pan without adding oil, remove and set aside. Heat the oil in the pan and fry the salmon cubes on all sides, season with salt and pepper and set aside.
  4. In the remaining oil, sauté the red cabbage and ginger for about 5 minutes. Add the drained noodles and sauté briefly. Add the hoisin sauce, soy sauce and some of the cooking water to the pan and mix well. Finally, add the salmon, bring to a boil, and season to taste.
  5. Serve the stir-fried red cabbage noodles sprinkled with toasted sesame seeds and spring onions.

Tip

For a fresh touch, add a squeeze of lime juice or sprinkle chopped cilantro over the noodles.
