Description

This finely crafted nakiri knife mimics a Japanese cleaver shape and features a wide, ultra-sharp blade that’s ideal for prepping everything from veggies to meat to fish. It’s a sturdy knife created for just about everything in the kitchen, but most especially for chopping, slicing, and dicing vegetables.

Handcrafted in Seki, Japan, top-of-the-line MIYABI Birchwood is a work of culinary art. Both blade and handle are crafted from the most precious materials, which shape their striking appearance.

More than meets the eye, the potent core of SG2 micro-carbide powder steel is protected by a stunning 100-layer flower Damascus pattern. MIYABI’s innovative, CRYODUR® ice-hardening process locks in the blade’s long-lasting sharpness.

The scalpel-like blade is complemented by an equally striking and comfortable Karelian (Masur) Birch handle. A prized material for knife handles, Karelian Birch is also the only wood ever used in a Fabergé egg. Exquisite and ergonomic, MIYABI Birchwood knives feel as good as they look.

Miyabi Birchwood SG2 6.5-inch Nakiri Knife is rated 4.9 out of 5 by 117.
Rated 5 out of 5 by from Beautiful Nakiri This knife performs as well as it looks. The Damascus cladding and hamon edge are amazing to look at. It makes cooking and preparing things that much more fun and visually appealing. Every time I set any of my Miyabi birchwoods to the side after dicing up an onion it gives me the same feeling of appreciation. It’s art, it’s beauty, and it’s performance all in the same package. What’s not love? P.S. I oil my handles with mineral oil and then a mineral oil beeswax mixture. It protects and beautifies the handles to an even higher level than when they come out of the box. Love my Miyabis!!

Rated 5 out of 5 by from Waited for this one! I am the proud owner of several other Miyabi Birchwood knives, and purchased the Nakari as soon as it came out! The Birchwood line is made out of SG2 steel which is quite hard, and keeps the blade edge nice and sharp. When they do need sharpening, its so easy to bring the knife back to the original edge, which makes me feel like I'm always working with a brand new knife! The Birchwood handle is so stylish and looks great in my new kitchen. Nakari knives are so useful and can be used for mincing, cutting, slicing and dicing. The shape of the blade is wider than a chefs knife which makes it really easy to scoop items once cut. I can work with the Nakari without experiencing hand fatique, and find myself grabbing it when I need tons of vegetables for soups, stocks and stews.

Rated 5 out of 5 by from Worth every penny The phrase, “you get what you pay for” truly applies to this knife. Both aesthetically and functionality, this is the Rolls Royce of knives. It cuts as beautiful as it looks.

Rated 5 out of 5 by from the WOW factor 101 layers of sheer bliss! This has been a great alternative to my Santoku, although I still use both. Using it mostly for veggies, it is one of the more beautiful knives I have seen or used! The birch handle is both attractive and a comfort. It also cuts through the hardest outer layers like melons and will not disappoint! Well worth the price to own this "wow" knife!

Rated 5 out of 5 by from A work of art The Miyabi birchwood nakiri is a beautiful work of art. It came incredibly sharp out of the box and cuts as good as it looks. Fit and finish is outstanding and while I’ve only had it for one week, my cutting experience with it is fantastic so far. Balance of the knife is right about at the middle point. Handle comfort is great. As is evident from photos this nakiri has a little bit of curve and a slighlty slopes tip rather than a squared off edge. This makes its shape slightly different than most nakiris although for all practical purposes it performs the same. There are many good nakiris that can be found at a lower price point but the birchwood series is clearly for a buyer who is also interested in the aesthetic of the knife. And this is a work of art.

Rated 5 out of 5 by from After using my Birchwood Chef all the time, I decided that i wanted another knife in the collection. went back and forth between the Santoku and the Nakiri for days, I am so happy with this choice, nothing wrong with the santoku ( will probably get that next) but the Nakiri cuts so beautifully! the balance and the feel of the handle have made this my new favorite knife. It looks so impressive and I'm amazed that they were able to keep such a sharp, lightweight, knife and maintain the 101 layer Damascus. You need this knife now!

Rated 5 out of 5 by from Amazing Workmanship Incredibly beautiful, impossibly sharp, amazingly practical. Can a knife be sexy? In this case, it think so. The blade has just the right heft and balance, and the birchwood handle feels great in my hand. I am puzzled as to why Miyabi didn’t seal or protect the raw wood handles, but I see that as an opportunity to personalize my new knife. If you purchase these knives, you are probably an enthusiast, and won’t mind putting in some extra work to protect your investment. It adds to the mystique. The knife, with the Damascus blade and birchwood handle, is too stunning to put in a block. Mine will be displayed in my kitchen on a magnetic easel for all to see. The SG2 steel ensures that super-sharp edge will last. I intend to keep my knife for a long time. It’s all about the metallurgy…

Rated 4 out of 5 by from Almost perfect, handle should be sealed I really like this knife. It’s kinda of a hybrid between a Nakiri and at santoku. This comes to more of a point than a traditional Nakiri making it more versatile. There is also a little slope that allows for rocking. The steel is excellent. I have a few carbon steel knives and while this is more difficult to sharpen the blade doesn’t need to be constantly wiped down. The reason I didn’t give 5 stars is that the handle is not finished/sealed. I would have preferred a finished wood like they do with the black and lower models. This just adds to the maintenance. When one has many knives as I do, I want as little maintenance as possible. If all my knives needed care in the handle it would drive me crazy. As a result I have bought artisanal and black lines that also has SG2 steel but doesn’t need the same level of maintenance.
