The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower damascus pattern.The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrasts with the damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen.Handcrafted in Seki, Japan.

Rated 5 out of 5 by from Sweet little blade Exceptional paring knife because it is so sharp. One stroke and a strawberry is hulled. It is all that a home chef or a professional could want. It is tough and it is hard. It will stand up to hours of work and hold an edge for months on end. That's because it has 133 layers of super-premium steel, ice hardened to 66 on the Rockwell. All that means to me is that I love cutting with every one of these knives. It is effortless. It makes my strokes elegant and I easily get into a rhythm when I am using a Miyabi Black. I love this line! The knives are also gorgeous. The Damascus pattern on the blade complements the beautiful Japanese Black Ash handles. No two are alike. These knives take a little maintenance to keep the wood handles smooth and beautiful. Enjoy and care for these knives for a lifetime.

Rated 5 out of 5 by from It’s a knife, a really nice knife:) Hey, it’s a knife, wait it’s a superbly crafted knife, the fit and finish is outstanding. I use it daily at home, and love the steel. Comparable knives at home include Wusthof and a custom AEB-L. Decades of use with those and about 100 meals with this knife. I must say this is a joy in the hand for many forms of prepping in Asian, French, Indian, and Mexican foods. The steel remains quite sharp, the edges are nicely rounded. The handle and balance of the knife sits well in my hand. I prefer it to the others I own even after first blush. It works beautifully choked up on the blade for peeling, and when making garnish such as tomato rose etc. For reference, I peel everything with a pairing knife instead of a peeler. This blade does an exceptional job gliding just under the skin to remove it. With a proper steel for the blade hardness, it will serve you well; and, it is so beautiful to look at as you place it in hand.

Rated 5 out of 5 by from Great paring knife This is a beautiful Japanese paring knife. I love how sharp this blade is, it peels anything like it’s butter. With the beautiful flower damascus design of the 133 layers of MC66 steel, you get an exceptionally sharp knife, while also having a durable blade thanks to it being ice hardened. These are some of the best Japanese knives on the market, not only for use, but aesthetically as well with the layered steel and black ashwood handles. The paring knife is a nice smaller blade for really slicing and peeling fruits and potatoes.

Rated 5 out of 5 by from Sturdy, Beautiful, Feels amazing in hand The first thing I noticed about this upon picking it up was how natural and comfortable it fit in my hand. I don't think I've ever had a knife feel like it belongs in my hand more than this one. I can exert some very fluid and precise motions when cutting with this paring knife, and the quality of the blade keeps it sharp for a long time.

Rated 5 out of 5 by from sharp beauty I use my paring knife a lot so I wanted to make a long term investment when I was looking for a new one. This one is as beautiful to look at as it is to use. The Ash handle is very smooth and comfortable in my hand. The unique wood grain is beautiful. The Damascus style blade is very sharp. The layers of high carbon steel and very hard core stays sharp for a long time and is easy to maintain. The slim blade design allows me to peel and shape with very little waste. The best tool for the job.

The Miyabi Black series are crafted with a core made from MC66 steel which is protected by 132 additional layers of steel that create a floral damascus pattern. The black ash handle is nonslip and comfortable in the traditional Japanes D shape. When you use this knife it literally glides through everything effortlessly

Rated 5 out of 5 by from Great small knife The knife is perfect, especially it’s quality to stay sharp for a long time. The only part I dislike is how delicate the knife’s surface is when it needs to be sharpened. I have to hold a knife at a very particular precise angle whilst sharpening, otherwise the beautiful pattern on it is going to be wiped out. I wish that beautiful pattern can be held stronger, otherwise (if smothered) the knife is losing its finesse.

Rated 5 out of 5 by from Quality Kitchen Knife So far, this knife has performed as expected. The blade edge is well honed. The knife was elegantly packaged. For the money, this knife is more than just a “Kitchen Drawer Queen”! The ordering process was easy, shipping was on par with product availability, which was in-stock, allowing for fast delivery. My only “complaint” is the warning label on the opposite side. I’m still buying more knives in the future!
