The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower damascus pattern.The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrasts with the damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen.Handcrafted in Seki, Japan.

Black’s 133-layer blade is made of a potent MC66 micro-carbide powdered steel, and is protected by a 132-layer Damascus pattern with a beautiful katana edge. Rated 5 out of 5 by from amazing knives Ive been purchasing pieces of the Miyabi Black line piece by piece over the past few years. I am so excited about this new one. The shape is so useful. The blade is longer than a paring knife and smaller than a chefs knife so its perfect for anything in between. The offset handle makes it easy to use on a cutting board but also to work with in hand for shaping. The Ash handle is so unique. Each of my pieces is individually beautiful. The Damascus style blade is very sharp and easy to maintain. The Honbazuke finishing method produces an edge that is like no other. Great to look at and even better to use.

The blade is gorgeous with 133 layers and an edge that can cut the thinnest slices imaginable yet feels light in the hand and has a perfect balance. The Black Ash handle is not only stunning but feels great in both a right handed as well as a left handed cook. The shape and size of this knife makes it a great addition to your knife collection. The prep knife can take on all those small projects such as mincing garlic, herbs and shallots. It also works great on small citrus and apples. Has a nice amount of knuckle clearance for maximum cutting performance. enjoy!

This Miyabi Black 5.25" Prep knife is a one of the favorite size in this line, I personally owned this and I am so impressed a knife is scalpel-like and yet still manageable. This is a true work of art, a knife is so sharp and fancy however it is so versatile you'll enjoy its performance, durability and functionality. Blade consists of 133 layers of steel, resulting in a floral Damascus pattern. This exquisite, hand-hammered effect helps prevent food from sticking. A striking maple wood handle shows uniqueness in every pieces. A knife scalpel-like sharpness, saves you time sharpening your knife because it stays sharp, honed it once in a while. It's hard to say which part is the highlight between the black ash wood handle or the MC66 core blade with 132 additional layers of steel creating a damascus pattern. This razor sharp knife provides you with the most delicate thin slices imaginable. A prep knife is one of the most reached for knives in a home kitchen because the cutting tasks do not always require the length and reach of a chef's knife.

Rated 5 out of 5 by from A great prep knife This is a beautiful Japanese prep knife. I love how sharp this blade is, it slices anything like it’s butter. With the 133 layers of MC66 steel, you get an exceptionally sharp knife, while also having a durable blade thanks to it being ice hardened. These are some of the best Japanese knives on the market. The prep knife is a nice in between size, smaller in length, but still a wide blade to chop, slice through produce easily on a cutting board.

The blade is super sharp, durable and well balanced. Every detail is considered. Love the feel of the D shaped handle. I use this blade for slicing longer vegetables such as eggplant and zucchini. If you want to slice an onion without crying...pick this !!
