The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower damascus pattern.The handle of the Miyabi Black series is made from unique wood, black ash. The grain and color of the black ash contrasts with the damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen.Handcrafted in Seki, Japan.

Black’s 133-layer blade is made of a potent MC66 micro-carbide powdered steel, and is protected by a 132-layer Damascus pattern with a beautiful katana edge. It makes for a fantastic kitchen knife. It can do so much with that arc - chiffonade, mincing so easy. It is all that a good cook - or even a beginning enthusiast - could want. It is tough and it is hard. It will stand up to hours of work and hold an edge for months on end. That's because it has 133 layers of super-premium steel, ice hardened to 66 on the Rockwell. All that means to me is that I love cutting with every one of these knives. It is effortless. It makes my strokes elegant and I easily get into a rhythm when I am using a Miyabi Black. I love this line!

Rated 5 out of 5 by from Ultimate Rocker The rocking santoku is one of my favorite knives. I love the incredibly sharp edge and the curved blade that makes rocking cutting a seamless, smooth motion. I almost feel like a chef. Miyabi Black is the ultimate in Japanese knives. It is made with one of the hardest kitchen steels, MC66, which assures you of incredible edge retention. Its wrapped with 132 layers which gives it that darker Damascus look. The ash handle is rounded, true to its Japanese heritage. It is one knife you would treasure forever.

The blade is gorgeous with 133 layers and an edge that can cut the thinnest slices imaginable yet feels light in the hand and has a perfect balance. The Black Ash handle is not only stunning but feels great in both a right handed as well as a left handed cook. This rocking Santoku is the perfect knife for cutting veggie and meat. Does everything a chef will do with the attributes of the Santoku.

Starting with a MC66 steel core with 66 or the hardness scale which is likely harder than any steel knife you have ever experienced, it is then wrapped an impressive 132 layers of steel to create a floral damascus pattern. Top it of with a traditional Japanese D shaped handle that is made of black ash. This knife is razor sharp and will stay that way use after use. Hand made in Japan by skilled artisans it will be a treat to reach for such a knife for your daily cooking.

I love the Black collection, I love the aesthetic of these Japanese knives and how beautiful the 133 layers of MC66 steel is on the blade. Even though the layers are pronounced in that beautiful flower Damascus design, it’s also subtitled in comparison to some other Miyabi blades. I love this rocking santoku, it is the perfect all purpose knife. Don’t have a chef knife, no worries you can use this knife. Need to mince herbs and garlic? This knife is a workhorse in your kitchen for all sorts of tasks, mincing, slicing, chopping. The black ash wood handle feels great in hand, contours nicely and the transition from handle to blade is comfortable. I love how durable this knife is, and that I can enjoy this very sharp Japanese knife for years to come.

The Miyabi Black is a one of a kind edition, made with MC66 steel, which is known to stay sharp, and is easy to maintain. The 132 layers of damascus design protects the inner core, as well as adds a lovely flower pattern to the blade. The gorgeous handle is made of black ash wood, which feels great and really shines against the damascus steel. I love the traditional D shaped handle, which makes for a truly authentic look and design. Decided on the Rocking Santuko because I use both European and Asian cutting methods, and the shape of the blade lends itself to both techniques. This knife brings things to a different level!
