Description

The Miyabi Black 5000MCD is a true work of art. The blade is constructed of micro-carbide powdered MC66 steel, which is ice-hardened to an impressive 66 HRC. This results in an exceptionally sharp and lasting edge. The blade is wrapped in 132 additional layers of steel, resulting in a beautiful flower damascus pattern. The handle of the Miyabi Black series is made from unique wood, black maple. The grain and color of the black maple contrasts with the damascus of the blade. The handle is crafted in a traditional "D" shape, providing optimal ergonomics for fatigue-free cutting in the kitchen. Handcrafted in Seki, Japan.

Rated 5 out of 5 by from Chef approved ! Such a gorgeous knife! I have a few from the birch collection and had to mix it up with this line. I’ve been eyeing this for a few years and finally decided to pull the trigger and purchase it. love the ergonomically designed handle! Not too heavy but also still sturdy. I’ve had arthritis issues in my hands and wrists for a while from work and this knife really helps make my job easier by not forcing me to have to put so much pressure down every slice or chop I do. Easy to maintain the blade sharpness and it’s one of my main tools I use, and being a chef, I use it OFTEN. I look forward to gradually purchase the complete line of this and the birch!

Rated 5 out of 5 by from Edge is excellent; Price reflects aesthetic moreso The knife is amazing, though don't let the Rockwell 67 rating and layer count lead you to believe it's the best knife on the planet. It holds an edge amazingly well, but there are other blades, even Miyabi blades, which seem to hold it just as well without the highest numbers on the block. That aside, this is a gorgeous blade with all the functionality you'll ever need. Be careful on your sharpening stone not to creep or slip otherwise you'll strip some of that awesome etching close to the blade's edge. No biggie though, if you eventually get to the point where you need to send it in for repairs, it's just an etch. That can be fixed with a scuffing and a dip in an acid bath.

Not only is it a delight to use, it is absolutely beautifully made. This is the first Miyabi knife I’ve purchased, but it won’t be the last!
