Handcrafted in Seki, Japan, MIYABI Evolution merges German engineering expertise with Japanese craftsmanship for the utmost control and accuracy in every cut. This 5.5-inch hollow edge santoku is perfect for detailed kitchen tasks. Santoku - Japanese for "three virtues" - excels at three cutting techniques: expertly mince garlic, slice cucumber, and dice onions with this smaller-sized Asian all-rounder. The hollow edge features a blade that has small indentations, known as grantons, that prevent food from sticking while cutting.

Crafted from superior quality fine carbide steel that is often used in razor blades, the knives offer the signature sharpness for which Japanese knives are known. A sophisticated six-step ice hardening technique unlocks the steel’s full potential guaranteeing these FRIODURx2® blades boast remarkable initial sharpness, cutting edge retention, corrosion resistance, and chip-resistant toughness.

Beautifully polished to a mirror finish, the blades have a katana edge reminiscent of the samurai swords forged in the same town centuries ago. Curved for comfort and thicker at the end to prevent slipping, the triple-rivet handles encourage fatigue-free cutting. A rounded spine, heel, and bolster, plus nine hand-finishing steps ensure these handles have unsurpassed ergonomics.

Rated 5 out of 5 by from GREAT ASIAN KNIFE, CUTS EVERYTHING! Evolution knife is exceptionally sharp, this prep knife is a medium-size and versatile knife. This knife size is not daunting for me and more comfortable in my hand better. It is slightly bigger than the prep knife. It is enjoyable to cut and slice everything such as fruits, vegetables, meat, poultry, butter, cheese, and even crusty bread. Indention on the blade creates a barrier between the food and the steel, preventing food from sticking. Evolution knife is made from revolutionary fine carbide FC61 steel, these knives offer the signature sharpness for which Japanese knives are known. Hand washing is recommended.

Rated 5 out of 5 by from This is a great Santoku This is a great Japanese santoku. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it, but is very sharp. This is a great knife collection if you want to go from Western style knives to Asian. With the Evolution, it brings the two styles together with the ice hardening of the FC61 steel, making it a much more durable Japanese knife. This is a really great santoku knife set that chops meat, fish and veggies with ease.

Rated 5 out of 5 by from awesome knife This knife is a great blend of both Japanese and Western methods. The blade is made of a super hard steel that goes through a double hardening process. This makes a blade that can be very thin and very durable. The forged blade goes through traditional Japanese processes including Honbazuke sharpening. There is even a traditional Katana watermarking along the blade edge. The Western style handle is very comfortable to hold and fits perfectly in my hand.

It is extremely versatile, has great balance, and works effortlessly when chopping a variety of vegetables, fruits and other ingredients. It maintains its edge and is very easy to care for. If I could only have one knife - this would be it!

It is made and handcrafted in Japan, fabricated from revolutionary FC61 fine carbide steel, Ice-hardened FRIODURx2 blade offers exceptional durability, cutting edge retention, and corrosion resistance. I have a prep knife myself and it is scalpel-like sharpness and comfortably in the hand. ime-tested German engineering meets Japanese craftsmanship.

Rated 5 out of 5 by from Evolution has always been my favorite line of knives from Miyabi. Very approachable, easy to care for and familiar in the hand. Made from superior FC61 stainless steel these knives are more chip and corrosion resistant than most Asian steels and will hold their acute edge angle longer as well. The POM handle is smooth and feels secure even when wet. Great for cutting, slicing and dicing veggies this is my go to knife.

Rated 5 out of 5 by from Perfect for smaller hands I have a couple of Miyabi knives and they are all extremely sharp and effective. I wanted this 5.5” knife because I noticed I still was using my 5” knife from another set all of the time but it wouldn’t hold an edge very well. The smaller size fits my hand perfectly and it is a great multipurpose tool. Most importantly, I knew if I got another Miyabi it would hold an edge - and it does!!

Nice to have both German engineering and Japanese craftsmanship in one knife! I love the shiny-mirrored finish, the thin blade and the hollow edge, so food doesn't stick. The ice-hardened process makes for sharp blade and durability, along with keeping it corrosion free.
