The 6-inch chef’s knife is a reliable, all-around knife for those who prefer a smaller scale chef’s knife. Chop herbs, mince shallots, and slice chicken with ease with this ultra-sharp blade.

Crafted from superior quality fine carbide steel that is often used in razor blades, the knives offer the signature sharpness for which Japanese knives are known. A sophisticated six-step ice hardening technique unlocks the steel’s full potential guaranteeing these FRIODURx2® blades boast remarkable initial sharpness, cutting edge retention, corrosion resistance, and chip-resistant toughness.

Beautifully polished to a mirror finish, the blades have a katana edge reminiscent of the samurai swords forged in the same town centuries ago. Curved for comfort and thicker at the end to prevent slipping, the triple-rivet handles encourage fatigue-free cutting. A rounded spine, heel, and bolster, plus nine hand-finishing steps ensure these handles have unsurpassed ergonomics.

Rated 5 out of 5 by from Beautifully crafted hybrid. This set of knives is suits someone who likes a little heavier handle and the smooth slicing of a Japanese blade. It really does nestle into the fingers while it glides through whatever you are cutting. The 8-inch chef's knife is the go-to knife for most professionals. Designed to handle most of your prep needs, this has a wide arc to the blade to assist in the rocking motion when cutting. With the flatter part of the blade reserved for dicing and mincing. The 6-inch chef is a good alternative if you prefer a smaller knife to work with. The 9.5-inch chef is a great size for working with pastry, meats and vegs; it is remarkably nimble.

Rated 5 out of 5 by from My Favorite I am fortunate to have several 8" Chef knives to choose to use and this is the one I rely on and consistantly pick up. I like that it feels super secure and familar in my hand. It has a little more weight to it then other Japanese knifes yet has a very narrow edge to give me those perfect thin slices. I recommend this knife for cooks that are wanting to try out a Japanese knife but have always used Western style knives. The transistion is easy and the results are satifying. Easy to care for, comfortable and well weighted, stays sharp through many uses and is easy to care for.

Rated 5 out of 5 by from Incredibly Sharp I've always had German knives because I love the way they feel in my hand and how durable they are. But sometimes you need a sharper knife for fine chopping and fish, and that's were the Japanese knife comes into play. It's much thinner and has a smaller edge but in the past, that could make it easy to chip. Evolution is made from an incredible new steel, FC61, that is very durable and chip resistant. It's made and sold in Japan as a premiuim knife which tells me it's authentic.

Rated 4 out of 5 by from You’ll never need another knife This knife is one of the best knife’s I’ve ever owned, highly recommend, the edge of the blade hold up very nicely and it will maintain its sharpness for a while, it’s very well balanced, it’s neither blade nor handle heavy, it’s very versatile, I use it at work for a lot of my prep work with many fruits or vegetables, and sometimes during service to cut certain meats or fish. And with the warranty that comes with the knife along side it’s durability, I have no worries about the knife being damaged. Overall I definitely recommend this knife for any professional cook or chef out there looking for that one good knife

The blade is dry sharpened creating a scalpel-like sharpness. I love the width on this blade and often turn it over to use a scraper so my prep work is uninterrupted .

This knife size is not daunting for me and more comfortable in my hand better. It is slightly bigger than the prep knife. It is enjoyable to cut and slice everything such as fruits, vegetables, meat, poultry, butter, cheese and even bread. Evolution knife is made from revolutionary fine carbide FC61 steel, these knives offer the signature sharpness for which Japanese knives are known. Hand washing is recommended.

This is the first chef knife I’ve owned, so I cannot offer a comparison against another brand. What I can say is that it chops freshly washed herbs effortlessly, cuts through pineapple like nbd, and can slice through a piece of paper like it’s butter. It should be called a butter knife because everything it touches turns to butter. The balance and lightweight feel of it is counterintuitive to how well it handles heavy duty chopping. I love this knife!! It’s a game changer for getting dinner to the table faster.

With super steels, FC61in the Evolution, and special ice-hardening prossess, they have more acute blade angles (read sharper) and enough thin blade profiles, they are extremely durable. Made in Japan by artisans who have had their craft handed down from genertion to genration, these are to collect and to use!

Does the evolution chef knife come with casing or sheaths? I tend to carry my knives to work in a case in my backpacks and looking forward to this purchase

I am using my friends Miyabi and love it. The number on the blade is 34021-200 (8”). I see your selling the 203. What is the difference?

What is the hardness of the blade on the miyabi evolution knives?

FC61 is renamed by zwilling it is Sandvik 13C26 Swedish steel.it has a carbon mass content of .68, chromium of 13.00, manganese of .70, phosphorus of .025 and silicon of .40 A very good steel but confusing since they dont use the original names for steel on their line of knives. It is a fine carbide steel from them that can be hardened up to 62 on the rockwell scale.
