Rated 4 out of 5 by from Miyabi Koh 3.5 paring This is a beautiful paring knife and I am excited to receive the rest of my Koh 4000fc set. It cuts wonderfully and cleans up well, when I clean immediately following use. I do have one asthetic disappointment, all of the photos did show the emblem on the blade, which I find attractive. However, left out of the photos, or I completely missed, the fine text on the opposite side of the blade. I’d prefer the simple, less is more, of just the emblem on one side, while eliminating the identifying detail text. It does not take away from the usefulness and sharpness of the knife.

Rated 5 out of 5 by from This knife is an example of how the smallest differences in design, can make a huge difference in usability. This is a great paring knife. The blade is over the op good. But the surprise is the ratio of handle to blade. The KOH line has slightly longer handles, and this one with little extra length gives me more control. I have more to hold on to. Since most of what I do with a paring knife is in my hand (vs on a cutting board), I really like having more to hold on to. The line is also good for folks with larger hands.

Rated 5 out of 5 by from I purchased this knife for a left handed friend, and he loves using it. The design of the handle allows for comfortable left and right hand use. Made in Seki Japan, the Koh line is well made and is the perfect combination of Japanese craftsmanship as well manufacturing. The FC61 steel keeps the edge nice and sharp, and also resists chipping and scratching. Perfect for the smaller jobs in the kitchen, slicing, peeling, hulling are a few of the jobs that are made simple using this knife.

Rated 5 out of 5 by from perfect parer I love how this knife feels in my hand. I like to use it for shaping and peeling. The hexagonal design gives me a good grip while still being very comfortable. The forged Japanese blade goes through a double hardening process making a very strong, resilient and sharp blade. The sharpness is easy to maintain as well when the time comes. The acute angle of the blade allows me to trim with ease without unnecessary waste.

Rated 5 out of 5 by from This beautiful Koh paring knife has a thin knife profile for a razor sharp blade. The mirror polished surface and pakkawood handle make it such a pretty knife. The handle is slightly longer than some and this makes it feel balanced and secure when using it for paring tasks. It is made from FC61 steel which attains an impressive 61 on the hardness scale so you can be sure it will stay razor sharp use after use.

This Koh 3.5" pairing is the perfect one to try - gets the small jobs done - peeling, coring, cutting blemishes, garlic, ginger, kiwi - anything in your hand! Te blade is super-sharp and cuts like a dream! Friodur ice-hardening process, so stays sharp and durable and no rust or chipping - EVER!

Rated 5 out of 5 by from All around perfection I love the ergonomic pakka wood handle, light weight, how sharp and glossy the Damascus edge is. I was able to score my sourdough with it, no scalpel required. It is beautiful and functional; cleaning chopping and cutting small fruit and veggies is now enjoyable and these are the little things that take up the most time on n cooking and make the big difference for the final outcome in any meal.

Super lightweight, it has a nice balance to the knife, and won’t get heavy in your hand if you are peeling fruits or veggies for an extended period of time. The thin yet sharp and durable blade of this parer does a nice job of peeling easily and smoothly. If you’re looking for a traditional style Japanese knife, this is the knife for you.
