Rated 5 out of 5 by from High Level Simplicity In spring and summer I do a lot of small fruit prep like strawberries. A quality paring knife is the tool for the job, but for me, many western style handles leave my hand feeling fatigued. The handle on the Koh is a Japanese style and I've found it to be so much more comfortable when using for long periods. The AEB-L steel is high quality and is easy enough to maintain.
