The matte interior lets fats and oils underneath allowing for superior browning and searing with an easy release. The natural properties of cast iron mean even heating and great heat retention. Its great for vegetables, amazing potatoes or a nice roast. I like to bring it right to the table to serve out of. The oval shape adds a softness over the traditional rectangle roaster design.

It is enameled outside which makes it very chip resistant. It is enameled inside which assures perfect browning, but it doesn't require seasoning. This is my go-to pan for au gratin potatoes. Nothing adds more flavor to food than being nicely browned. It is also perfect for cobbler. I love how cast iron stays warm much longer than a stainless steel or glass pan. This pan is durable enough to use on the stovetop or in the the oven.

This dish works perfect on my oval gas burner and will also go in the oven. I used it for shrimp scampi, started on the cooktop, finished in the broiler to melt some parm on top. The dual handles make it easy to grab with gloves or potholders. And it will look great on the table and will stay warm to serve.

Granted, this oval gratin is much more versatile than just for that but the cast iron sure does make a perfect mac! The nonstick enameled surface achieves that ideal brown and crisp on the outside while keeping things creamy and indulgent on the inside. Plus, it cleans up easy no matter what you bake in it and can be used as a serving dish too when you bring it right from the oven to the dinner table!
