Rated 5 out of 5 by from My favorite paring knife This bird's beak paring knife does everything I need for the way I cook. I make a lot of vegetables for my family. This knife rocks! Coring out a cauliflower, removing Brussels sprouts from the stalk, turning an artichoke. Excelent for peeling an apple, a peach. I love this knife! Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a year, hand wash it and it looks like I never use it.

This Zwilling bird's beak peeler can also be used for paring and a small kitchen tool boning knife. The sturdy bolster provides the right balance and acts as a finger guard, controlled by the thumb and index finger, for less fatigue. Precision-forged from a single piece of solid steel. I have never thought how versatile this knife can be other than for peeling and paring knife, up until I learned more about it. A customer was impressed when I shared another usage of this knife as a small boning knife and how much this bird's beak peeler knife can do.

Rated 5 out of 5 by from Indespesable I know that almost nobody flutes mushrooms anymore, but this knife is handy for more than that task alone. It fits perfectly in my hand for some quick paring over a stock pot and of course carves out those undesireable parts of veggies. It's a tourne knife by design but does everything other than slice across a cutting board. Paring is almost a lost art that could stay alive with this kind of knife. The blade arrives so sharp that I've only run it across a diamond steel to mantain it over 3 years of constant use.

The handle on this knife fits in my hand really nicely, giving me extra comfort in griping my knife while I peel and slice produce. I love the shape of this paring knife, it is perfect for getting the perfect peel off of potatoes, fruit. With this forged knife being made with a special formula stainless steel and ice hardened, this peeler will stay sharper and stronger longer than other German knives.

Rated 5 out of 5 by from Unique and Versatile I love this little peeler! Its curved blade make it perfect for hulling strawberries, removing spots from potatoes or deveining shrimp. It's so awesome that it is one of the knives that I take with me on vacation. It's extrememly sharp and has stayed sharp. I was worried about how to keep it sharp with it's curved shape, but I pull it through my sharpener just like every other blade. Definitely a great addition to my knife block.

Made from premium German steel that has been ice hardened for better edge retention and a full tang this knife has a great balance and feels secure in the hand. Use this for coring strawberries, taking the eyes out of potatoes and pineapples and peeling fruit.

Excellent for rounded items, as well as lopping the florets off broccoli and cauliflower stalks. Comfortable handle and weight make it comfortable for tireless peeling and hand-held cutting.

In addition to peeling I use it for removing blemishes from fruits and vegetable, removing strawberry stems, slicing soft fruits like peaches or plums and even for trying my hand at decorative garnishes. Professional S knives have a sturdy forged bolster and this peeling knife has a slightly longer handle that helps you to feel in control.
