Rated 5 out of 5 by from The Zwilling 7" fillet knife is extremely durable and offers the flexibility I need when filleting fish. The special formula steel has a high carbon count, which is why it's so strong. In addition the Friodur hardening process guarantees the carbons are distributed equally, which is why there are no weak points on the blade. I don't use a fillet knife often, but it is nice do know that when I need one I have just the right tool to make a tough job easy. Nice and sharp, easy to navigate through skeleton structure and bones. What a difference a good boning knife makes!

Rated 5 out of 5 by from Must have if you prep your own fish This is the knife I use take the skin off a side of salmon. Great flex and it stays sharp! Glides down the backbone. Better on larger cuts. I also use to cut back the fat cap on a brisket. Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a year, hand wash it and it looks like I never use it.

Rated 4 out of 5 by from This knife can take apart a pork shoulder in minutes (well maybe a couple of minutes). The blade is so flexible yet pops right back into shape. The knife is made from German Special Formula Steel and forged from one piece of steel so durable for a lifetime, and that's its warranty - lifetime. Blade is razor sharp and can get through any meat you can think of. Don't worry if you hit a bone, its been ice hardened so super strong. A little secret, I use this to cut rinds away from any kind of melons, works beautifully.

I own a complete knife set from Henckels, and have NEVER been disappointed. They are sturdy and strong, and made with excellent materials. I had originally considered asking for a cheap alternative from Amazon - but chose not to because most times you get what you pay for. I wanted a good quality filet knife that was going to last a long time. Henckels are worth every penny. I highly recommend.

Rated 5 out of 5 by from great thin blade Its hard to find a high end fillet knife these days. This one is great. The blade is so thin and flexible. I can get right close to the skin to remove it in one fluid motion with no waste. The quality Zwilling German steel gives me confidence in the blade no matter how much i flex it. The classic three rivet handle is comfortable to hold in any position. It is very easy to sharp and gives great fillets every time.

Rated 5 out of 5 by from Super flexible This is the most flexible fillet knife I have ever used. We eat a lot of fish and having a good fillet knife is a must in our kitchen. This has enough flex to get between the skin and the meat or the meat and the bone cleanly and take very little flesh. Use this for skinning tomatoes or taking the pith from citrus rinds. I also pull this knife out when I want to cut a mango away from the pit.

Thanks to the pandemic, I've plenty of time to perfect a lot of my knife techniques. The knife is perfect for skinning, boning or (duh) filleting fish and works great on large shrimp or other shellfish. It hefts equally well in either hand (I'm ambidextrous). Worth every penny!!!
