Rated 5 out of 5 by from The key is the heat When using these pans to get the nonstick properties particularly for eggs in any style is to first heat the butter in the pan at high heat just enough to bubble a knob of butter to fully coat the surface (not brown it), then turn down the heat to medium low, then put your eggs in. Let the eggs bubble on the underside for a bit then give the pan a short jerk and they'll be floating in an instant every time. I love these pans, but heat management is key to their performance. Sometimes you'll get a little bit of sicking in the middle of the egg but don't panic as you can easily loosen it with a metal spatula and its back to floating or flipping.

Rated 4 out of 5 by from Slightly disappointed-but quality still TOPS I would rate this 5 stars if my pans did not come with a slight "defect" on the outside of each pan. (in the same spot on each pan) I'm sure it happened in the packing/shipping process. However, the pans still work great and I did not want to wait on a return. (so that is on me) I already have the larger frying pan and LOVE it, so I HAD to order the two smaller ones. The other reason for the 4 stars instead of 5 is that none of them have the option to buy lids- that I can find on your website anyway. Overall, the quality, cleanup, use etc. are top notch. These were recommended by a chef friend who works as a chef for a major league baseball team. He said it is all they use! I can see why.

Rated 4 out of 5 by from Cookware for dainty dishes These ceramic pans are great for daintier dishes cooked at medium heat, such as eggs, pancakes, or caramelized onions. If you use the care instructions and ideal heat settings for this pan type, it will retain its non-stick properties. It may require an occasional seasoning, but these ceramic pans will provide you years of use with the appropriate care and attention that high quality cookware deserves.

Rated 1 out of 5 by from Fragile and Stick I have 8, 10, and 12 " ceramic Zwilling pans, all lost their coatings on the edges and all stick. I returned 2 under warranty, and now I wash by hand and after 2 weeks they are sticking again. I use oil, let them heat up, and still an egg sticks and I have to soak the pan to get it off. Chicken breast and olive oil did the same. Not worth it at all. Do not buy.

We bought these thinking the quality would be high and I've been so disappointed as the years continue. Spending as much as we did on our full set and not having them last is disappointing. Never again.

I tried higher heat and it doesn't work as well. I've had the pan for about 6 months and I use it about 6 times a week. I like the pan and am considering purchasing more.

Rated 1 out of 5 by from Rivet issue While cooking a turkey burger over moderate heat the rivet on the inside of the pan came off in a flash of light and loud sound. It became a projectile that traveled approximately 6ft. No one was injured but we will never use the pans again.

Has the coating been tested to be free from lead, cadmium and other heavy metals?

All reading in this area suggests that my pans got overheated. They quickly gather a film when frying and do not release easily. Can they be revived, restored to their prior nonstick property, or do I need to swap them out?

Ceramic nonstick is particularly sensitive to heat and is best used at low to medium heat per use and care guidelines. Unfortunately, once nonstick properties diminish, there is no way to restore them. Our nonstick coatings are guaranteed for two years. If you believe the issues you're experiencing are due to a potential manufacturing defect, you may consider filing a warranty claim. Can I get these recoated? I have had mine for almost 5 years and they could use a rejuvenation.

We do not offer a repair/re-coating service. If nonstick performance has diminished as a result of normal use, you may need to replace your cookware.

Do these pans need to be "seasoned" to help keep food from sticking?  I don't have a frequent problem with food sticking, but when it happens it is a huge problem that soaking doesn't seem to help with....

No, nonstick cookware does not need to be seasoned before use. In fact, traditional seasoning methods can scorch and destroy the nonstick coating. Ensure that you are using an appropriate amount of the right kind of cooking fat for what and how you're cooking, i.e. butter or olive oil for lower temperature tasks and oils with higher smoke points, like vegetable, peanut, or coconut oil, for cooking or frying at higher temperatures.
