This is my absolute favorite line because of the Ebony wood handle and the durability of the blade which is Cronidur 30 which is 100x's more resistant to corrosion than standard steel. This knife feels like velvet in your hand due to the wood and the curved bolster supports the pinch grip. So much good happening here!

Rated 5 out of 5 by from These are hands down the best German knives on the market. An heirloom collection that will last your life time and those after you. The Ebony wood handles are slim and feel smooth and secure in the hand and the curved bolster is made to make the pinch grip comfortable and puts less stress on the wrist. With a 12.5 degree angle these knives cut like a Japanese style knife and the Cronidur 30 steel keeps the edge sharp through the toughest projects.

Rated 5 out of 5 by from A fantastic paring knife The Twin 1731 collection is one of the most beautiful and best that Zwilling has ever made. They took the look of the Zwilling Pro knives with the curved bolster, but they used a different steel with the Cronidor 30 (a steel used on space shuttles) that is harder and sharper and then accented the blade with an ebony wood handle that is seamless and rivetless, making this a statement knife. A very sharp paring knife, this is the German knife you want in your kitchen for peeling tough skins like potatoes.

The solid handle is made from ebony wood which is very dense, dark and durable; only a limited number of trees where cut for this anniversary edition. The blade is quite unique! It is made from Cronidur 30, the steel used for space shuttle bearings; 100x more durable and corrosion resistant than anything on the makret. It's incredibly sharp and very comfortable with the signature curved Pro bolster.

Rated 5 out of 5 by from This is the sharpest paring knife you'll ever use. I'm amazed at how sharp this knife is and how smoothly it cuts through everything. The steel is Cronidur 30 which is among the hardest of steels so the razor sharp edge will stay that way use after use. The curved bolster which is a comfortable spot for your thumb and forefinger is attached to a gorgeous ebony handle. I'm really impressed with this knife.

Rated 5 out of 5 by from Feels fabulous! Worth the splurge! I rarely buy a kitchen implement that I want to 'collect' and put on a shelf and not use. But with the knives in this line, I have thought about it. But, nah, knives are meant to be put into service - so mine is put to work daily. LOL. Here is why I am in love. The quality of the Twin 1731 line is unmatched. The specialty steel makes the 1731 line unique; it is the same steel that is used in space craft. That kind of durability is what you want from knives of this quality. The blade will stay sharp for a long time, it can stand up to the demand of regular professional use. And it will take an edge when it's sharpened. The angled integrated bolster - a recent innovation - makes for better comfort and more control. Each beautiful sculpted ebony handle is unique for it's grain. Regular oiling will bring out the depth and color. This is a special line to commemorate Zwilling's founding in 1731. So I expected it to have all the best attributes, and it does!

I use this for slicing, peeling and mincing small fruits and vegetables. Great for mincing ginger and garlic! Beautiful and comfortable handle.

When using a Chef's Choice Electric Sharpener, what edge angle do you recommend I use for the entire 1731 series? I have a few of these knives. 15 degree? 20 degree?

Thank you for contacting ZWILLING! The sharpening angle for our 1731 Series is 12.5 degrees on each side and 10 degrees for the Santoku We do not recommend the use of any electric sharpeners, as this may damage the edge. Thank you ZWILLING
