Nimble, light, and exceptionally comfortable, our made-in-Japan Twin Fin II knives are chip and corrosion resistant and easy to care for. With a FRIODUR ice-hardened blade made of Nitro 60 special formula stainless steel, these knives boast long-lasting durability. The curved bolster acts as an extension of the hand and the ergonomic steel handle with gilled design is hygienic and exceptionally well balanced, promoting fatigue-free cutting even for the largest chopping tasks. These professional-style knives are also dishwasher safe, making quick work of clean up. The 5.5-in. santoku knife is a smaller version of the 7-in. It is an all-purpose Asian style knife ideal for smaller chopping tasks.

It's made from nitrogen infused steel that brings a level of durability to knives previously unknown in the premium knife world. They are not only razor sharp with the extremely thin, sharp blade, but this new steel provides chip resistance, durability, plus they are dishwasher safe! Each knife is individually weighted which means the handle and blade are balanced perfectly. This shorter Santoku is perfect for smaller fruits and vegetables, as well as for that person who feels the 7" blade is simply too long to handle.

This smaller Santoku can take on all those small projects such as mincing garlic, herbs and shallots. It also works great on small citrus and apples. Has a nice amount of knuckle clearance for maximum cutting performance. Made from innovative Nitro 60 steel this Japanese crafted knife has an acute edge angle, is extremely durable, chip and corrosion resistant. Well balanced with an ergonomic handle and dishwasher safe, this will become your go to knife!

Rated 5 out of 5 by from A small Santoku, adds flair to the kitchen! I love this smaller Santoku, 5.5"! It is one of the most versatile knife shapes I have ever used. This knife is my number one go-to because it can chop, dice, cube, mince, and slice pretty much any veggie, fruit, or piece of meat on which I use it. The Friodur ice-hardened blade is super resistant to corrosion and the longevity of the edge is great, a scalpel-like sharpness! The stainless steel throughout the handle gives it a really industrial look and gives a little flare to the kitchen. The ergonomic handle itself is super comfortable to hold and makes for effortless handling. A quality knife such as this really allows you to let the knife do the work. The enjoyable experience comes as no surprise from this premium Japanese knife. A MUST-HAVE! An ideal gifting knife.

You can use the santoku on meat, poultry and vegetables, and will find that it is easy work with. This knife is razor sharp, corrosion resistant, durable and will retain these properties due to the N60 steel and the special ice-hardening process.

This is a nice and lightweight knife, perfect for anyone needing something light to hold in hand or if using for an extended period of time. A nice ice-hardened steel, this blade will stay sharp and have lasting durability thanks to the N60 steel.

Rated 2 out of 5 by from Fin II knife blade I have had this knife for approximately 2 years, the blade has broken when I pressed some garlic against the kitchen bench - not impressed and to top it off I paid $199 at Myer when I bough it, it is now a mere $89 on the website.
