With a FRIODUR ice-hardened blade made of Nitro 60 special formula stainless steel, these knives boast long-lasting durability. The curved bolster acts as an extension of the hand and the ergonomic steel handle with gilled design is hygienic and exceptionally well balanced, promoting fatigue-free cutting even for the largest chopping tasks. These professional-style knives are also dishwasher safe, making quick work of clean up. The 9-in. The thin, sharp blade will also slice any large meat perfectly. It Twin Fin is an incredible knife line made in Japan where extreme sharpness and durability is a requirement. It's made from nitrogen infused steel that brings a level of durability to knives previously unknown in the premium knife world. They are not only razor sharp with the extremely thin, sharp blade, but this new steel provides chip resistance, durability, plus they are dishwasher safe! Each knife is individually weighted which means the handle and blade are balanced perfectly.

This blade is a hybrid of two distinct Japanese knives and is made for chopping at the tip of the blade as well as the base of the blade. Perfectly designed to chop large quantities of vegetables as well as thinly slice meats. I have been using this knife on a regular basis and continue to be impressed by its performance. The handle is extremely comfortable to hold. The innovative curved bolster allows for full use of the blade as well as a perfect spot to grip your knife. Exceptional quality. Twin Fin II is manufactured in Seki Japan with all of the craftsmanship one would expect from a premium Japanese knife. Each blade is hand crafted by 46 Japanese artisans. Made out of innovative Nitro 60 Steel, Twin Fin II is extremely durable, chip and corrosion resistant with a razor sharp long lasting edge. Each knife is individually weighted for perfect balance with a curved bolster and ergonomic handle for an exceptional cutting experience. Added bonus these are dishwasher safe!

This blade can be used for a variety of prep work thanks to its beautiful blade shape, a scalple-like sharpness blade. This knife definitely exhibits the high-quality characteristics you expect of a Japanese knife. The stainless steel throughout the handle gives it a really industrial look and gives a little flare to the kitchen. The ergonomic handle itself is super comfortable to hold and makes for effortless handling. I also love the overall balance of the knife, giving it a great feel as I slice. This blade shape is perfect for use in Japanese cuisine and is widely used for the preparation of sashimi and the fine slicing of vegetables. The Twin Fin ll Kiritsuke is made from N-60 special formula stainless steel and ice hardened which starts sharp, stays sharper longer and is incredibly corrosion resistant. It is a unique knife but one that is versatile. Shh...I use it as a meat slicer.

The innovative curved bolster makes this knife comfortable and easy to use the pinch grip. The N60 steel plus ice-hardening results in this knife being razor sharp, highly corrosion resistant and durable. I love this blade profile and it has become one of the most used knives in my kitchen.
