Ingredients
Chia gel
- 1 tbsp Chia seeds
- 3 tbsp warm water
Chia gel
- 1 large untreated orange
- 250 g vegan butter or margarine
- 250 g raw cane sugar
- Chia gel (see above)
- 100 g apple puree
- 200 g whole wheat flour
- 200 g wheat flour
- 2 tsp baking powder
- 100 g ground almonds
- 1 pinch of salt
- 100 ml unsweetened almond drink
- 1 level tsp ground cardamom
Also
- vegetable oil for greasing
- 80 g apricot fruit spread, to taste
Preparation
For the chia gel, mix the seeds with the water and leave to soak for at least 30 minutes.
Preheat the oven to 180 °C top and bottom heat (160 °C fan). Brush the ZWILLING FRESH & SAVE Gratin Dish with a little oil.
Wash the orange in hot water and grate the zest with the ZWILLING Z-CUT Fine Grater. Then peel the orange, including the white skin, and cut into slices. Quickly mix the vegan butter or margarine with the other ingredients, except for the orange slices, until smooth, using a hand mixer with whisk attachment. Then pour into the prepared Gratin Dish.
Spread the orange slices over the batter and gently press them in. Bake in the oven on the rack on the middle shelf for about 45 minutes. Check with a wooden skewer whether the cake is baked through. Take out of the oven, leave to cool on a cooling rack and remove from the dish.
If desired, heat the fruit spread in a small saucepan and brush the cake with it for a nice shine.
