Asian soup with prawns
This delicious Asian soup with prawns is quick to make and a suitable dish for many occasions, such as a starter or a delicious light evening meal with some baguette.

INGREDIENTS
- 75 g celeriac
- 75 g carrots
- 75 g leek
- 15 g ginger
- 1 stalk of lemongrass
- 1 red chilli pepper
- ½ bunch of coriander
- 2 dried Kaffir lime leaves
- 200 g frozen prawns
- 400 ml coconut milk
- 400 ml vegetable or chicken stock
- Salt and pepper
Preparation
- Weigh and measure all the ingredients, prepare them and place them ready.
- Trim, peel and cut the celeriac into thin, approx. 5 cm strips. Trim, peel and cut the carrots into approx. 5 cm strips. Wash, trim, halve and likewise cut the leek into approx. 5 cm strips. Peel the ginger and cut into sticks. Beat the lemon grass with the back of a knife until soft and then cut in half. Wash, trim and halve the chilli lengthwise. Remove the seeds and white interior and then chop finely. Wash the coriander, shake it dry, remove the leaves, chop finely and place to one side.
- Add the vegetables, lemon grass, Kaffir lime leaves and prawns to the kettle. Pour in the coconut milk and stock.
- Bring to the boil at 100 °C. Once the boiling point has been reached, first activate the coffee brew setting and the keep warm function. Test after 10 minutes. The vegetables should be firm to the bite. Remove the lemon grass and Kaffir lime leaves.
- Season the Asian soup with salt and pepper, serve and enjoy immediately with sprinkled coriander.
Tip
Anyone who likes the soup to be a little filling can also add a few soup or wok noodles. A vegetarian version without prawns is also delicious.
