Cold Pea Soup with mint
This refreshing pea soup is perfect for the summer season. Alternatively, the soup can also be heated up to create a hot meal in no time.

INGREDIENTS
For the soup
- 400 g frozen baby peas
- 400 ml vegetable stock
- 200 ml soya drink
- 2 sprig of mint
- Salt
- Cayenne pepper
- Nutmeg
- 1 untreated lime
For the Decoration
- 0,5 Granny Smith apple
Preparation
- Weigh and measure all the ingredients, prepare them and place them ready.
- Cover the peas with ample boiling water. Wash the sprig of mint and shake dry. Wash the lime with hot water, dry, grate the zest off half of the lime and squeeze the juice out of the other half. Remove the core from the Granny Smith apple and chop the apple into tiny cubes. Mix with the lime juice and put to one side.
- Add the ingredients to the blender jar in the following order: drained peas, mint, vegetable stock, soya drink, lime zest, a good pinch of salt, cayenne pepper, and freshly grated nutmeg. Close the blender jar with the lid.
- Select the Smoothie setting and press the button to run the program. Or blend manually to achieve the desired consistency.
- Once the blending is finished, add the ice cubes and run the Smoothie program again. Or mix manually until the ice cubes are crushed. Remove the lid and season the soup to taste.
- Dress the pea foam soup, garnish with the apple cubes and serve.
Tip
If you don’t like mint, you can use parsley as an alternative.
