Porridge

Step 1/3
Prepare the porridge by mixing the oat flakes with the chia seeds and the linseeds. Bring the milk to the boil while stirring. Stir in the oat flake mixture, bring to the boil once and then simmer and stir over a low heat for a further 3 minutes. Turn off the heat and allow the porridge to steep for another 10 minutes while stirring occasionally. Meanwhile, add the honey and gingerbread spice.

For the topping, lightly roast the hazelnuts in a pan without fat. Roughly chop the pistachio nuts. Peel the apples according to preference, remove the seeds and cut into wedges. Slice the bananas. First add the apple wedges and butter to a pan over a medium heat and allow to caramelise for two minutes while occasionally turning. Also add the banana slices. After another two minutes, add the honey over the pieces of fruit, mix slightly and remove from the stove.

Portion the porridge in two bowls. Add the caramelised fruit, sprinkle the pomegranate seeds, chopped walnuts and pistachio nuts and dust with a little cinnamon.
