INGREDIENTS

  • 6 small-medium artichokes
  • Juice from 1 lemon
  • Juice from 1 lemon
  • 2-3 sprigs each of fl at leaf parsley
  • thyme and basil
  • 1 garlic clove
  • 50 g butter
  • 2 tsp. honey
  • 2-3 tbsp. olive oil
  • Salt, pepper
  • 1. Clean, peel and halve the artichokes lengthways. Rub the halves with lemon juice. Cut the cheese into pieces.

    2. Pluck the herb leaves, peel the garlic. Finely chop both together.

    3. Foam the butter in a small frying pan, add the herb mixture and sauté for a few minutes. Then remove the frying pan from the stovetop and stir in the honey.

    4. Fry the artichokes in hot olive oil in a frying pan for about 8 mins. turning regularly. Season with salt and pepper.

    5. Pre-heat the oven grill.

    6. Place the 4 fried artichoke halves next to each other in small, square Staub cocottes and cover each with a piece of cheese.

    7. Place the cocottes under the hot grill and gratinate the artichokes for about 2 mins.

    8. Drizzle the herb-honey butter over the cheese and artichokes and preferably serve immediately
