INGREDIENTS

3 tablespoons Sunflower Oil
1 tablespoon Butter
1 arm of Lamb
1 carrot
2 red Peppers
2 celery Stalks
2 onions
6 garlic Cloves
1 liter Red Wine
2 fresh Thyme
1 teaspoon Black Peppercorn
1 bay Leaf
1 apple
1/2 lemon
5 dried Figs
5 dried Apricots

HOW TO MAKE IT

  1. Season lamb with salt and pepper. Sear both sides until browned.
  2. Saute onion, carrot, red pepper, celery stalks and garlic in the same pot.
  3. Pour red Wine into the pot and wait until the wine is nearly absorbed.
  4. Sprinkle fresh thyme, black Peppercorns, apple, bay leaf and add dried figs and dried apricots the pot.
  5. Bake in preheated oven at 150°C (302°F) for 4 hours.
