INGREDIENTS
2kg leg of lamb, diced
100g curry powder
100g tomato paste
3 medium-sized onion, diced
15g cumin powder
10g paprika powder
Salt
Pepper
Raisin
Sour cream
Coconut cream
Olive oil or vegetable oil
HOW TO MAKE IT
- Rub cumin and curry powder, pepper and salt into the lamb meat and massage with your fingers. Preserve for overnight.
- Use large-sized Staub cocotte, pour in some oil and brown the lamb slices on each side over medium heat. Set aside.
- Sauté the onions until translucent. Add the tomato paste, curry powder, browned lamb pieces and water. Stew till boiling.

- Serve with couscous in hot Tajine. Season with sour cream, raisin and fresh parsley.
