INGREDIENTS

2kg leg of lamb, diced
100g curry powder
100g tomato paste
3 medium-sized onion, diced
15g cumin powder
10g paprika powder
Salt
Pepper
Raisin
Sour cream
Coconut cream
Olive oil or vegetable oil

HOW TO MAKE IT

  1. Rub cumin and curry powder, pepper and salt into the lamb meat and massage with your fingers. Preserve for overnight.
  2. Use large-sized Staub cocotte, pour in some oil and brown the lamb slices on each side over medium heat. Set aside.
  3. Sauté the onions until translucent. Add the tomato paste, curry powder, browned lamb pieces and water. Stew till boiling.

  5. Serve with couscous in hot Tajine. Season with sour cream, raisin and fresh parsley.
