Ingredients
- Bananas 5
- Flour 200g
- Ground Almonds 75g
- Baking Powder 2TL
- Coconut Oil 40g
- Almond Milk 60ml
- Pitted Dates 95g
- Chopped Walnuts 60g
- Salt
- Margarine(for greasing)
Utensils
- loaf pan, bowl (small), 2 large bowls, immersion blender, colander, knife, cutting board
Step 1/3
- 95 g pitted dates – margarine (for greasing)
- loaf pan – bowl (small)
Preheat oven to 180°C/350°F and grease a loaf pan. Pour some boiling water over the dates and let them sit for approx. 10 min.
Step 2/3
- 200 g flour – 75 g ground almonds – 2 tsp baking powder – 4 bananas – 40 g coconut oil – 60 ml almond milk – salt
- 2 large bowls – immersion blender – colander
Mix flour, ground almonds, baking powder, and a pinch of salt until well combined. Peel and roughly mash most of the bananas with a fork. Drain the dates, add to a large bowl with coconut oil and almond milk, and blend with an immersion blender.
Step 3/3
- 60 g chopped walnuts – 1 banana
- knife – cutting board
Add date mixture and mashed bananas to the bowl with the flour and mix to combine. Fold in walnuts. Pour the mixture into greased loaf pan, cut the last banana in half lengthwise and place over the batter, cut-sides up. Transfer to the preheated oven and bake at 180°C/350°F for approx. 45 min., or until an inserted toothpick comes out clean. Enjoy
