STRAWBERRY ASPARAGUS SALAD WITH PAPAYA AND CRESS

INGREDIENTS

  • 500g strawberries
  • 1 small papaya
  • 1 pot of cress
  • 500g of green asparagus
  • 5 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tsp mustard
  • 1 hot pepper
  • 1 finger lime (lime caviar)
  • Salt and pepper
  • Blossoms

HOW TO MAKE IT

  1. Use a vegetable peeler to peel the lower third of the stalk and blanch for 10 minutes. Wash and quarter the strawberries, peel and dice the papaya.
  2. Mix the oil, vinegar, mustard, salt, lime caviar and pepper in a bowl.
  3. Now cut the peppers into fine rings and add to the dressing.
  4. Place everything in a bowl and mix carefully, arrange on a platter and garnish with the cress and flowers.
