Raspberry Curd

INGREDIENTS
- 750 g curd
- 300 g frozen raspberries
- 100 g sugar
- 1 lemon
- milk or cream
Suitable toppings:
- dried raspberries
- currants
- cacao nibs
- pomegranate seeds
- dark chocolate
HOW TO MAKE IT
- Put the raspberries in a bowl. Add the sugar and mix everything well.
- Once the raspberries are thawed, place them in a mixing jug. Then, finely puree the raspberries with a blender.
- Pour the curd into a bowl, add the pureed raspberries and mix everything with a bit of milk or cream to the desired consistency.
- Finally, add lemon juice to taste.
