INGREDIENTS

Tartar sauce

  • 200 g/7 oz mayonnaise
  • 5 gherkins
  • 1 tbsp capers
  • 1 small shallot
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 3 stalks flat-leaf parsley
  • salt, pepper

Fish

  • 4 firm cod fillets (approx. 150 g/5 oz each)
  • 120 g/4 oz wheat flour
  • 1 tsp baking powder
  • 180 ml/6 fl oz beer (e.g. pale ale)
  • 2 tbsp neutral vegetable oil
  • salt, pepper
  • Breadcrumbs for turning

Potato chips

  • 4 large, mainly waxy potatoes
  • 1-2 tbsp neutral vegetable oil
  • salt

HOW TO MAKE IT

  1. To make the tartar sauce, put the mayonnaise in the ZWILLING ENFINIGY chopper. Add the gherkins and capers. Peel and roughly chop the shallot and add. Add the mustard and lemon juice. Wash the parsley, shake dry, pick off the leaves and add to the chopper. Season with a little salt and pepper. Attach the motor unit of the ZWILLING ENFINIGY hand blender. Coarsely or finely chop the tartar sauce as desired. Season to taste again and chill until ready to serve.
  2. For the batter, mix the flour with the baking powder, beer, oil, salt and pepper in a bowl until smooth. Then leave the batter to rest for a few minutes. In the meantime, wash the fish fillets, pat dry, season with salt and pepper and cut into pieces.
  3. For the chips, peel the potatoes, cut into sticks, wash thoroughly and pat dry very well with a clean kitchen towel (or kitchen paper). Pour the oil over the potato sticks, season with salt and mix thoroughly.
  4. Cut the baking paper to fit the basket of the ZWILLING Air Fryer and pierce several times with a small knife to allow the air to circulate better.
  5. Pull the fish fillets through the batter, dredge in the breadcrumbs and place in batches on the rack in the air fryer. Bake at 200 °C for approx. 15 minutes until crispy. Remove and keep warm. Bake the remaining fish fillets in the same way and keep warm.
  6. Place the potato sticks in the ZWILLING Air Fryer so that they do not overlap too much. Bake at 200 °C for approx. 15-20 minutes until crispy. Shake once halfway through the cooking time. Season with salt while still hot.
  7. Serve the crispy fish with the hot chips and enjoy as finger food with a generous dollop of tartar sauce.

Tip

The batter can also be prepared with mineral water instead of beer.
