GRILLED SWEET POTATO WITH GUACAMOLE
A refined recipe idea for all vegetable lovers! The grilled sweet potatoes are hearty in flavor and super as a side dish or as a vegetarian or vegan alternative.

Ingredients
- 2-3 sweet potatoes (depending on size)
- 1 teaspoon brown sugar
- 1 teaspoon salt
- 1 teaspoon oregano
- 1 teaspoon coarsely ground black pepper
- Zest and juice of half a lemon
- 100 ml olive oil
- Fresh rosemary
Preparation
- Peel the sweet potatoes and cut into slices about 1 cm thick.
- Mix all ingredients for the marinade vigorously in a large bowl.
- Add sweet potato slices and use your hands to incorporate the marinade so that everything is evenly distributed. . Leave to marinate for approx. 15 minutes.
- Preheat the grill to 180° and grill the slices with the lid closed for about 20 minutes until soft. Turn every few minutes.
- Remove the sweet potatoes from the grill and garnish with rosemary needles.
Top tip:
It goes great with guacamole. For this, simply mash an avocado in a bowl with a fork until you get a slightly chunky cream. Quarter 5 cherry tomatoes and add. Optionally, finely chop the cilantro and add to the avocado as well. Season with a tablespoon of olive oil and salt, pepper, curry and lemon juice.
