GRILLED SWEET POTATO WITH GUACAMOLE A refined recipe idea for all vegetable lovers! The grilled sweet potatoes are hearty in flavor and super as a side dish or as a vegetarian or vegan alternative.

Ingredients

  • 2-3 sweet potatoes (depending on size)
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon coarsely ground black pepper
  • Zest and juice of half a lemon
  • 100 ml olive oil
  • Fresh rosemary

Preparation

  1. Peel the sweet potatoes and cut into slices about 1 cm thick.
  2. Mix all ingredients for the marinade vigorously in a large bowl.
  3. Add sweet potato slices and use your hands to incorporate the marinade so that everything is evenly distributed. . Leave to marinate for approx. 15 minutes.
  4. Preheat the grill to 180° and grill the slices with the lid closed for about 20 minutes until soft. Turn every few minutes.
  5. Remove the sweet potatoes from the grill and garnish with rosemary needles.

Top tip:

It goes great with guacamole. For this, simply mash an avocado in a bowl with a fork until you get a slightly chunky cream. Quarter 5 cherry tomatoes and add. Optionally, finely chop the cilantro and add to the avocado as well. Season with a tablespoon of olive oil and salt, pepper, curry and lemon juice.
