INGREDIENTS

  • 2 eggs
  • salt
  • 125 ml/4 fl oz milk
  • 30 g/1 oz sugar
  • 100 g/3.5 oz wheat flour
  • 30 g/1 oz sultanas, to taste
  • 1 tbsp butter

  • Icing sugar for dusting

HOW TO MAKE IT

  1. Separate the eggs. Whisk the egg whites with a pinch of salt until stiff. Mix the egg yolks with the milk, sugar and flour until smooth.
  2. Fold the beaten egg whites into the batter until just incorporated. Add the sultanas to taste.
  3. Melt the butter in the ZWILLING Joy Plus fry pan 24 cm over a medium heat. Then pour in all the batter and bake. When the Kaiserschmarrn is half-baked, turn the Kaiserschmarrn over and finish baking on the hob. Alternatively, bake without turning in the pan in a preheated oven at 180 °C top/bottom heat (160 °C fan) for approx. 8-10 minutes.
  4. Tear the finished Kaiserschmarrn into pieces using cutlery or spatulas and turn them over several times in the hot pan. Dust with icing sugar and enjoy warm immediately.
  5. Serve with apple or plum compote.

Tip

The sultanas can be soaked in 2 tablespoons of rum or apple juice beforehand.
