INGREDIENTS
- 2½ oz. Parmesan cheese, chopped
- ¾ cup olive oil
- ¼ tsp. freshly ground black pepper 2 cups tightly packed fresh basil
- ½ cup toasted pine nuts
- 2 garlic cloves
HOW TO MAKE IT
- Place the cheese in the blender jar. Blend on Setting 1 for a few seconds then gradually increase to Setting 8. Blend until the cheese is finely grated. Transfer the grated cheese to a small bowl and set aside.
- Place the oil, pepper, basil, pine nuts, and garlic in the blender jar. Blend on Setting 1 and gradually increase to Setting 5, using the tamper to press the ingredients into the blade. Blend for 30 to 40 seconds, until smooth. Return the grated cheese to the blender and blend another 30 seconds, until fully incorporated and smooth.
