The 5.5-inch santoku knife is a smaller version of the 7-inch. Santoku - Japanese for "three virtues" - excels at three cutting techniques: expertly mince garlic, slice cucumber, and dice onions with this smaller-sized Japanese all-rounder.

The potent core of SG2 micro-carbide powder steel is layered in a stunning Tsuchime finish. This exquisite, hand-hammered effect helps prevent food from sticking. The CRYODUR® blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Each knife features a hand-honed blade finished with a true katana edge, a homage to the samurai swords made in Seki centuries ago.

Rated 5 out of 5 by from great santoku This is an amazing santoku. The handle is very comfortable for long term use with the wide D shape. The blade is very sharp. The high carbon steel stays sharp for a long time and is easy to maintain. The acute angle of the blade allows for thin accurate cuts and slices. There is a lot of artistry to this knife as well. The mosaic pin and gold and red embellishments on the handle set it apart from so many other knives. The hammering and sand blasting on the blade are very unique. It is even sharpened in the traditional Japanese Honbazuke method and there is a watermarking above the blade edge just like traditional Katana blades.

I'd use this every day and never needed a lot of sharpening for its scalpel-like sharpness, honed it once in a while. Her husband asked, cuts like butter, huh? She said, I have butter that is more difficult to cut than the pepper I just cut with that. I think that about sums it up.

Rated 5 out of 5 by from If you are looking for a shorter Chef's knife, the Miyabi 5" santuko is something worth considering. Made in Seki Japan, this knife is made from SG2 micro steel which has the hardness you need for sharpness and edge retention. The pakkawood handle is extremely comfortable and feels just right even when using for long periods of time. The santuko is also sharper than the traditional chef's knife because the angels are set at 9.5 degrees which are extremely acute. Lastly, I love using a 5" blade. Accomplishes everything the longer blades do, but lighter and more compact.

The Miyabi Artisan 7" santoku is a great example of how Japanese craftsmanship and modern technology marry well and continue to produce outstanding cutlery products. Made in Seki Japan, the blade is skillfully designed using an inner core SG2 micro steel, known for it's hardness and durability. The hammered pattern on the blade protects the inner core and exudes elegance and class. I particularly like the feel of the traditional D shaped handle, which is wider than some of the others on the market, and is also a handsome pakkawood. The half bolster has a slight curve, making it very comfortable and appealing to the eye. This knife is as sharp as it is sharp looking. Love this knife.

Rated 5 out of 5 by from Go ahead, get it. The first time I splurged and got a 'great' knife, I kept in the box for months. I only pulled it out to prep special meals. Then I hit a milestone birthday - you no the ones - and said 'what the heck am I doing that for?' and now I use it, and all my great knives every day. I even let my husband use them! Go figure! Great knives serve us, the user. They make cutting and slicing and julienne-ing and chiffonade-ing easier and more fun. And this knife does all that. The santoku is an excellent all purpose knife. Its wide blade keeps it stable when cutting through vegetables and large fruits, and the razor-sharpness of the blade slides right through raw meats, poultry and fish. I give this knife some love - hand wash it, hone it regularly, hardly sharpen it and I am certain it will be there for my next few milestone birthdays.

Rated 1 out of 5 by from Tip broke off - want a replacemnt I bought the set of these knives at Sur La Table and paid $699.99 thinking I was getting the best with a lifetime warranty. The tip broke off my 7" Santoku and I took it back to Sur La Table and they said I had to contact Miyabi (paid in the rear) but I cannot find any number or website for them to honor the warranty - If someone at Miyabi reads this please email me.

Is it dish washer safe?

This knife is not dishwasher safe. If washed in a dishwasher you risk ruining the wooden handle and chipping the blade.
