Rated 5 out of 5 by from Debated whether to purchase a 9.5 inch blade, but ended up caving in. Glad I did. The longer blade gives me plenty of surface area to prep for meals fast and efficiently. VG10 steel is 60 on the Rockwell scale, which helps keep the nice sharp edge I was attracted to. Made in Seki Japan, manufactured in the Japanese tradition, with 64 layers protecting the inner core, and creating a lovely pattern on the blade. The Kaizen is hand honed in the Honbazuke tradition and is incredibly sharp. The traditional D shaped handle, is easy on the hand, and offers a comfortable and secure grip. Love using this knife.

I’ve owned a Classic SHUN chef’s knife and I must say that while I really enjoyed it, the Miyabi Kaizen 8” chef’s knife is vastly superior in it’s feel (great materials and handmade 100% unlike the Shun). The balance of the knife is fantastic and it’s a much sharper knife since Miyabi uses a much smaller edge degree than even Shun. The blade is absolutely beautiful with gorgeous Damascus steel and the VG-10 steel is a classic standard. The new FC61 must be truly something in the Kaizen II. Highly recommended for anyone who enjoys spending time in the kitchen.

Rated 5 out of 5 by from Sharp, Balanced, and Generally a Joy to Use It slices beautifully, and I can feel how much less pressure it takes to chop—which is lovely, and also safer. The handle (while the least expensive in the Miyabi line) feels great in my hand, to the point that I'm going to have a hard time going back to a straight-ahead, Western-style handle (though of course, that's subjective). As a bonus, this is probably the least expensive way to get that beautiful Damascus look. I can't speak to how the edge would hold up in a professional kitchen, but for daily home kitchen use, this knife is pure joy.

Rated 5 out of 5 by from Sharp, sharp, SHARP! I'm an amateur home cook with a desire for quality products. Despite being a what Miyabi calls and entry level knife, this knife is stupendous! I'm not quite confident in my chopping skills, but the weight and size of this knife allowed me to learn what I could from a first night's use! I breezed through julienne-ing carrots and slicing though cabbage to make a coleslaw. The knife did not skip a beat. I forsee that this is just one of those knives I will go to for time to come.

Rated 5 out of 5 by from Love knife but.. This is my first expensive knife. I purchased the 8” Kazen Chefs knife.The knife is beautiful, feels great when using and sharp. I did notice some marks on the knife under the wavy part. Thought to myself well ok it is hand forged. But when I registered my knife I was offered 3 options for this knife and mine stated “visual imperfections” - the different options was NOT offered nor was it disclosed that the knife would have visual imperfections. This feels deceptive to me and impacted my positive feelings about Zwilling.

Rated 5 out of 5 by from Reinvigorated my love for cooking! This product has reinvigorated my love for cooking and food prep. I have been a bit dull with my cooking lately (more so my attitude) and I felt a spark to try a new knife, one more expensive and nicer than my current, to try and get out of this funk. The second this knife was in my hand I wanted to chop any and everything around me, 3 days later I’m still thrilled and excited to use this knife. I honestly feel an obligation to keep it clean, nice, and on display it is so lovely. Thank you!

The tip of my Miyabi Kaizen 8" Chef's Knife has broken off. Do you replace your knives when this happens? It slipped from my hand onto a wooden floor!

You could try it, they might bite. Henckels has replaced a blade for me that broke due to heavy use. But then again I broke another Henckels blade due to misuse and I didn't consider sending it in; as it was my mistake. Would one expect Ford or Mercedes to replace a car if one's hands dropped the steering wheel and one drove into a telephone pole? User error or misuse is not, IMO, grounds for free replacement.

Are Miyabi knives sold in Japan? I am looking for the Kaizen to purchase, but Thai customs do not allow knifes to be import (considered as weapon). If the Miyabi Kaizen are sold in Japan, where it can be physically purchase? Thanks, Bill

Our Kaizen series does not have a full tang. The length of the tang is specifically designed to offer optimal balance.

Is this Miyabi Kaizen I or II? What are the difference between the two?

The Kaizen and Kaizen II have similar blade shapes and aesthetics, though there are some key differences. The largest difference is the steel. The Kaizen is made from SG2 steel that is wrapped with 64 layers of steel in a damascus pattern. The steel has a hardness of 60 HRC. The Kaizen II is made from FC61 steel that is wrapped in 49 layers of steel in a damasucs pattern. This steel is slightly harder at 61 HRC. The other major difference is the handle material. The Kaizen has a linen micarta handle, while the Kaizen II has a pakkawood handle (a wood/plastic composite). Both handles are "D" shaped, though the Kaizen II has slightly more contour. The Kaizen II is exclusively available at Sur la Table, while the Kaizen is available to all Miyabi dealers.

Is this dishwasher safe?

Hand wash is strongly recommended for all of our knives, even more so for the Artisan series. The natural wood handle is not dishwasher safe. Dishwashers can also lead to chipped blades, and the harsh detergents can degrade some materials.
