Made of heat-retaining cast iron, the Staub cast iron braiser features a black matte interior that is rough with hills and valleys, creating a textured surface for outstanding browning and easy release. Sear meat and poultry, then add liquid, cover with the tight-fitting lid (which seals in moisture) and braise until the food is meltingly tender. The pan is also a great size for cooking paella and jambalaya—then take it directly to the table for serving.
